When you keep champagne for several years however, it becomes an old wine, appreciated by some but not to everyone's taste.
Champagne is delicate wine. Store your bottles lying down, away from light and heat. We advise you avoid sudden temperature variations.
It is a well-known fact that champagne must be consumed chilled, never icy cold. The cold disturbs people's perception of aromas and flavours.
To chill champagne, we suggest you place it in the fridge: put the bottle at the bottom of the fridge 3 to 4 hours before serving. You can even leave it there longer, as long as the temperature remains constant.
Personally we prefer to use an ice bucket : take the bottle from your cellar and immerse it in a mixture of water and ice cubes. It will be at the right temperature in 15 to 20 minutes.
Freezers should definitely not be used.
